- Ingredients:
- Fresh pasta (eggs, semolina, olive oil, salt, water). Filling of your choice: spiced pumpkin, roasted Jerusalem artichoke, kale and ricotta, or mixed mushroom. Sauce of your choice: pomodoro, basil almond pesto or caper brown butter.
- Taste & texture:
- Silky, hand-rolled pasta parcels with a soft, generous filling, tossed in your choice of sauce.
- Serving ideas:
- Serve as a main or a pasta course with shaved parmesan on top and a fresh salad on the side.
- Preparation & reheating:
- Warm the ravioli in a pot of boiling water for 2-3 minutes. In a separate pan, heat your sauce and add the ravioli. Season with salt and pepper and serve hot with shaved parmesan on top. Add 2-3 spoons of the pasta water for a runnier sauce.
- Storage:
- Store in the fridge.
